Traffic Light Risotto

Adapted from recipe in Tana Ramsay book.

200g Risotto Rice
500ml Chicken stock
25g Butter
1 butternut squash, diced with skin removed
1 pepper, chopped
1 onion, finely sliced
1-2 handfuls of spinach, torn
A few slices of smoked bacon
125g Parmesan, grated

Serves 4
Prep Time - 10 minutes
Cooking time - 30 minutes

1. Put everything except the bacon and parmesan in oven proof dish, cover and place in oven at 200C. Cook for 30minutes.

2. Five to 10 minutes before cook time has finished, cook the bacon and leave to one side.

3. Take risotto out of oven, and remove lid. Stir to loosen any stuck at the bottom, there may be some liquid left but that will be absorbed. Sprinkle over parmesan and stir through.

4. Serve with the bacon on top, either whole or broken into pieces.


This is an ideal one pot dinner; perfect for days when it's hard to get motivated about dinner; and still healthy. It has a variety of colours of vegetables, which are important for giving the full range of vitamins. I like to replace some of the stock with wine, but it is not necessary.
