Chickpea Curry

2tbsp sunflower oil
1 large onion, chopped
2tbsp curry powder, mild or medium
400g can chopped tomatoes
2 cloves garlic, finely chopped
350g new potatoes, boiled and cut into 1cm cubes
400g can chickpeas, drained
2tbsp lemon juice
2tbsp mango chutney
Naan bread, to serve
1. Heat the oil in a saucepan, add the onion and cook until soft. Add the curry powder and stir over a low heat for 1 minute.
2. Add the canned tomatoes, garlic and 50ml water. Cover and simmer for 10 minutes. Add the potatoes, chickpea, and lemon juice and simmer, uncovered, for a further 10 minutes
3. Stir in the mango chutney and serve with naan bread and, if desired, more mango chutney
