Mild Fruity Chicken Curry

Mild Fruity Chicken Curry

Serves 4
Ready in 40 minutes

2tbsp sunflower oil
1 small onion, finely chopped
1tbsp curry powder
4 chicken breast fillets, cut into bite-size pieces
8 ready-to-eat dried apricots, roughly chopped
1 large sweet potato, peeled and diced
25g split red lentils
2tbsp mango chutney
Rice, to serve

1. Heat the oil in a saucepan, add the onion and cook over low heat for 5 minutes. Add the curry powder, and stir over low heat for 1 minute
2. Stir in the chicken, apricots and sweet potatoes until they are coated in the curry. Add the lentils and 325ml water, and heat until simmering. Cover and simmer gently for 20 minutes
3. Stir in the mango chutney and cook uncovered for another 5 minutes. Serve with rice and extra mango chutney if desired.
